This rotation was very interesting and eye-opening. I learned about the obstacles of limited food supply due to the impact of COVID-19, food waste, and budgeting that affect the overall quality of nutrition provided to students attending APS. I enjoyed working with management (one-on-one) and visiting over 20 schools to explore the motivations behind food choices and improve diet quality in the school system. Additionally, I went on a trip to a local farm with director Sandy Kemp to speak with the owners of Silver Leaf in Corrales, New Mexico as a potential wholesaler for APS.
